Caramel Banana French Toast...Next Week Blueberries

Caramel banana french toast! My hubby woke up to this for breakfast. I found the recipe in the Williams Sonoma Comfort Foods cookbook. I have found that every recipe that I have made from any Williams Sonoma cookbook has been fantastic. I'm looking forward to the fall so that I can make more from Comfort Foods. Greg loved this breakfast. I however thought it was a little sweet for breakfast. I prefer eggs and toast myself.

Now that is it blueberry season I want to make something for breakfast next weekend using blueberries. Did you know that blueberries are a super food that are loaded with fiber? I didn't until I was reading up on them. In Sweden dried blueberries are given to children to treat diarrhea because they are lethal to E. Coli. Blueberry Jelly Bellies were created for Ronald Reagan. Blueberries are the #1 Antioxidant food...What are antioxidants? "Antioxidants help neutralize harmful by-products called "free radicals" that can lead to cancer and other age-related diseases.  These molecules battle cell and DNA damage involved in cancer, heart disease, diabetes, and perhaps brain degeneration.  Anthocyanin (the pigment that makes blueberries blue) is thought to be responsible for this major health benefit. " (http://www.trueblueberry.com/blueberry/blueberry_antioxidants.asp) My favorite part about blueberries is that they taste great. I don't like them raw, but I love them in not so healthy foods like blueberry muffins. Maybe that's what I'll make next weekend. Or Blueberry cupcakes with homemade frosting. Hmmm lots to think about. Send me any good blueberry recipes you have.
